Classic Bolognese
¾ lb Ground beef, 85% lean
2 slices of bacon
28 oz can crushed tomatoes
1 tbsp tomato paste
2 Carrots peeled and chopped
½ Onion, chopped
2 cloves garlic, chopped
1 tsp dried oregano
1 tsp dried thyme
salt and pepper to taste
Generous splash of heavy cream
Generous splash of Red wine
¼ cup chopped Parsley
¼ cup chopped fresh basil
½ lb Pasta – Like spaghetti or Linguini
Pecorino Romano cheese
Directions:
Fry the bacon in a pan and when slightly crispy, transfer for a cutting board and chop. Cook the beef in the pan with the bacon drippings and crumble the meat. It doesn’t have to be cooked all the way, just browned and broken into small pieces. Transfer the meat to a slow cooker, along with the chopped bacon. Season with salt and pepper. Add the crushed tomatoes, tomato paste, carrots, onion, garlic, and dried oregano and thyme. Stir and cook on low for 6 -8 hours. Boil water for pasta and while it cooks, add a generous glug of both red wine and heavy cream. Sprinkle with parsley and basil. Scoop sauce on top of pasta and add more fresh chopped parsley ad basil and grated Pecorino Romano cheese.
